We used an infrared thermometer to gather an average internal temperature by measuring the temperature of each wall, and the BakerStone had one of the lowest standard deviations of any we tested, with an average difference of only 21°F.

How it works The Pizza Oven Box’s patented design raises the temperature of outdoor grills to that of a real wood burning pizza oven. But what isn't immediately evident is that there is a gap between the pizza stone itself and the back wall, through which the back burner pumps convective heat to both drive airflow and maintain a consistent internal temperature averaging an impressive 780°F. Though it is not reasonably as portable as some, this easy-to-use oven is sure to appeal to novice pizza makers, and professionals who love to keep a well-supplied kitchen.Both lit up quickly, and while we do like the double-burner function, a single ignition would have been easier. But for reasons already stated, the little bit of extra effort is well worth the additional performance. Once it’s secured and tightened, the BakerStone manual recommends that the gas connection should be tested with a soapy water solution to ensure there are no leaks. To make sure the hot air is enough to cook the top you preheat the unit until the top and bottom stones are almost the same temp. Thanks to the combination of insulation and design, no other oven operates quite as efficiently as the BakerStone, as evidenced by the lack of reheat time required between pizzas.

When you too much buildup on the surface of your base stone, simply remove the metal screws which hold the stones supports in place, flip the base stone over horizontally (ensuring that the front edge of the stone lines up with the front edge of the housing, leaving a 1 1/2" vent in the back of the oven) and replace the stone supports and screws. For example, I found that on one of my grills, a 4 burner, I need to turn the two outside burners on high, and the two center burners on medium. However, the weight and bulk of this oven may be a deal-breaker for some, and if you are willing to spend a bit more, there are some options out there that are marginally better. You should wipe the stone free of any debris with a damp cloth and then allow your unit to preheat on high for approximately 15 minutes before the first use.
